On February 3, 2004 JRC welcomed back our nutrition consultant, Dr.
Antonia Demas. |

Dr. Demas discusses the merits of choosing a healthy
diet, while demonstrating how to make her tasty "Antonia's Raw Fruit
Tart" (see below for recipe) during a presentation at JRC's bi-weekly staff nutrition
luncheon. |

With the assistance of student helpers, Lisa,
Audrey, Katie, and Nicky (left to right), Dr. Demas explains how to create the crust
for her Raw Fruit Tart, stressing that it is completely free of any
animal products or oils. |

Katie and Nicky put the finishing touches on the
beautiful tart, decoratively placing an array of delicious fruits,
including papaya, mango, banana, kiwi, and berries, as Dr. Demas,
Audrey and Lisa look on. |

After the decorating has been
completed, it's time to eat! While Lisa and Sam place the delicious
fruit tart on plates, Nicky and Audrey serve the anxiously awaiting
(and hungry) audience members.

Antonia's Raw Fruit Tart
For crust: 1 cup chopped dates
1 cup chopped nuts (any kind -- I usually use walnuts or a
mixture)
1 cup coconut
1 tablespoon cinnamon
Optional: add 1/2 cup dried cranberries or cherries
Toppings may include slices of:
Banana
Papaya
Mango
Pineapple
Strawberries
Apple
Blueberries
Raspberries
Blackberries
Kiwi
Star fruit
Pomegranate
Grapes
Pear
Warm the dates (cranberries or
cherries) in microwave or on the stove. Mix remaining crust ingredients
together and knead. Spread into a tart pan or pie plate. Press
down evenly with your hands. Add a layer of thinly sliced
bananas over crust. Lightly press down. Add fruits in either
layers or to decorate, pressing down lightly. Refrigerate for
at least an hour so the natural pectin's in fruit will set.
