Chocolate Fruit Fondue

- from The McDougall Quick and Easy cookbook

2 T cocoa powder
1 T cornstarch
1/4 cup water
1 12 oz can apple juice concentrate, thawed
2 tsp vanilla
4 cups mixed fresh fruit, cut into chunks

Combine the cocoa powder and cornstarch in a saucepan. Slowly as the water while stirring to make a smooth paste. Stir in the apple juice concentrate and vanilla. Cook over low heat, stirring constantly, until thickened, about 5 minutes. Transfer to a fondue pot or chafing dish to keep warm. Dip pieces of fruit into the warm sauce.

Recipe hint: Use a variety of fruit, such as strawberries, bananas, apples, mangoes, papaya, or melons to dip into the chocolate sauce.

Fat Free Fondue

4 cups stock
2/3 cups white wine or 1/4 cup cider or rice vinegar
2 lemon slices
2 large cloves garlic, minced
2 tbsp minced gingerroot
2 tsp granulated sugar

Combine all ingredients in fondue pot, electric skillet or electric wok. Just before serving, heat to simmer.

Some suggested veggies: broccoli, summer squash or zucchini, Swiss chard or romaine lettuce, sweet red or green pepper, mushrooms. Serve with rice.
